Our Organic Huila – El Bombo takes a classic Colombian coffee profile and carries it into darker territory. At the lighter end of the roast, this coffee shows the nutty character often found in traditional Colombian coffees, with peanut and tree-nut notes, gentle acidity and a satisfying body. But take it darker, and something entirely different happens.
Our Dark Roast brings the body forward and lets the sweetness develop into rich baker’s chocolate and caramel, while roasted nut and subtle smoky notes add depth. The acidity retreats almost completely, leaving a smooth, heavy-bodied cup with a lingering semi-sweet finish.
Look closely and you can still find hints of the coffee underneath the roast—a touch of lemon, soft floral character and roasted nuts—but they are woven into a much darker flavor profile. Think dark chocolate, toasted nuts, caramelized sweetness and a whisper of smoke rather than bright citrus or sharp acidity.
What makes Huila coffee special?
Huila sits in Colombia's southern Andes, between the Eastern Cordillera and the Colombian Massif. Its volcanic, mineral-rich soils, high elevations and distinctive growing conditions help create the balanced, aromatic coffees the region is known for. Huila coffee carries a protected Colombian Denomination of Origin, recognized for its balanced cup, sweetness, medium-to-high body, and characteristic caramel and fruit notes.
Huila is also Colombia's largest coffee-producing department. More than 80,000 coffee-growing families cultivate Arabica across the region, making coffee far more than an agricultural product here—it is deeply woven into the culture and economy of Huila.

Our take: If you enjoy Colombian coffee but prefer your coffee dark, full-bodied and low in acidity, El Bombo is a Colombian worth trying. It trades the bright fruit and citrus you might expect from a lighter Huila roast for the deep, comforting flavors of chocolate, caramel and toasted nuts.
