Our Organic Huila – El-Bombo Medium Roast brings out a wonderfully approachable side of this classic Colombian coffee. The cup opens with a gentle caramel sweetness, followed by the warm, comforting flavor of graham cracker. In the background, a subtle sweet orange note adds just enough citrus character to brighten the cup without becoming sharp or acidic.

This is a low-acid Colombian coffee. Rather than a bright, tangy acidity, El-Bombo has a soft, rounded character that stays comfortably in the background. The sweet-orange note provides a little lift and complexity without bringing the tartness or bite often associated with citrus-forward coffees.

The graham cracker character gives the cup a pleasant baked sweetness—somewhere between toasted grain, light brown sugar and a freshly baked cookie—while the caramel carries through into a smooth, lingering finish. The result is a balanced, easy-drinking coffee with good body and plenty of sweetness.

A Little About Huila

Huila is one of Colombia's most important coffee-growing regions, located in the southern Andes. Coffee is grown throughout the department by thousands of small family farms, and Huila has earned a protected Denomination of Origin recognizing the distinctive characteristics associated with coffee from the region.

Huila coffees are known for balance, sweetness, body and layered flavor. Our Medium Roast of El-Bombo brings those qualities together in a particularly smooth expression, emphasizing caramel sweetness, baked graham-cracker character and soft sweet-orange notes rather than bright acidity.
